In recent years, more and more Italian chefs have come to Guangzhou to provide locals in the city with authentic Italian dishes. Francesco, an Italian devoted to making Italian food popular in Guangzhou, owns an Italian restaurant named Ze"vero. He believes Guangzhou diners receive Italian cuisine well. That"s why Guangzhou has seen a variety of prosperous Italian restaurants, be they good at pizza, steaks, or in his case, pasta. He thinks Cantonese and Italian cuisines are similar and both focus on fresh ingredients with simple seasoning. He observed that Chinese southerners champion the original flavors of ingredients more. As a result, he can strike a balance between Italian and Cantonese food.
来广州领略粤菜与意大利菜相通共融的魅力
近年来,越来越多意大利厨师们来到广州,为广州本地人提供专属于意大利原汁原味的家庭菜式。Francesco是对传播意式美味充满着热情的意大利人,他在广州东山口主理了一家意式餐厅Ze"vero。在他看来,广州的食客们对意大利菜的包容度很高,这里既有做比萨很好的餐厅,也有做扒类很出色的扒房,还有自己这家以面食取胜的餐厅。他认为粤菜跟意大利菜的制作都有着异曲同工之妙,那就是注重新鲜,调味简单。根据他的观察,南方的食客更推崇菜式保留原有的风味,他能够找到本土菜和意大利菜融合的平衡点。
